Visit a local souk, and class in an authentic Berber kitchen at an ecological farm

This cooking class  takes place at an ecological farm “Lalla Abouch”, 30 km south of Essaouira. This is the land of the Berbers, Morocco’s indigenous population. The Berbers of the Haha Hills farm crops and keep animals, mainly goats and sheep.

Following a visit to the local souk featuring freshly harvested vegetables, meat, eggs, honey;  the class is centered around an authentic Berber kitchen stocked with traditional items for food preparation.

Khadija and her daughter Hafida, will roast barley grains on the fire, and then grind them in a stone mill to produce the flour and semolina used as the base for traditional flat bread and couscous. The class will bake flat bread in a clay oven and steam couscous in a traditional clay pot.

Learn to make a traditional tagine of vegetables and goat or other meat with Moroccan spices and olive oil – oil derived from the olive trees growing on the farm. (There is a vegetarian option).

Depending on the weather, lunch will be served either under an  Argan tree or on a sunny terrace at the farm.  Following the meal, enjoy tea infused with fresh herbs from the garden.

On the way back to Essaouira stop at an argan cooperative with oil tasting.

The trip lasts from 9am - 5pm, and includes both transport and lunch.

Alternatively we will arrange private (car rather than coach) transfers for you; helicopter transfers are also possible for some destinations.
